Wine LabelTight Cabernet blackcurrant leafy texture a wine for future development. A couple of years under the belt. Beginning to round out and build mid palate complexity will keep developing.

I thought I heard the old man say
Give one more haul and then belay.
Sea Shanty

The ring is one of the most common of objects to which ropes are made fast. This is true both at sea and at shore. The Capstan knot is a type of figure 8 fastening which makes a useful mooring knot for the painter of a small boat.

The Capstan Cabernet Sauvignon with its distinctive black currant cedary bouquet and elegant flavours is a wine of exceptional length and structure. Given a safe anchorage this wine will mature into a classic with additional complexity. A worthy choice for dining at the Captains table.

2004  Larks Head Cabernet Merlot

Wine LabelDeep plum red with purple tints. Lifted spice and raspberry fruit notes with subtle vanillan oak and meaty hints. Medium bodied spice and savoury fruit flavors fill the mouth. Ripe soft tannins and long spicy finish. A complete and well balanced palate.

The Larks Head is a secure knot used to make fast the boat to a wharf. The Larks Head Cabernet Merlot is as dependable. With expressive leafy blackcurrant Cabernet fruits and the plummy richness of Merlot we have a wine of great flavour and finesse.

As a young wine it is all about sweet fruit and subtle oak, but with a few years stowed below decks, the wine will develop the complexity and softness that cellaring bestows.

Dry sun and dry wind.
Time to reap and time to bind.
Old weather saying.

Knotting ought to he reckoned in the scale
of insignificance next to mere idleness.
Dr Samuel Johnsons Dictionary

Dr. Johnson may be correct, but there is no insignificance in the flavours of this deeply coloured Shiraz, rich in berry and spice flavours with a velvet finish as complex as the knot that is presented. The Central Victorian region is well known for producing some of Australia's finest Shiraz and our Sheep Shank sits comfortably within this spectrum.

Balanced for immediate enjoyment or a few years in dry dock to create the additional complexity and charm that cellaring will provide.

Price per Bottle: $25.00
Price Per Dozen: $300.00

2007  Rose Lashing Rose

And now for something different. This is our first wine produced at The Bridge Winery. A very pale pink/apricot color. Rich fruit bouquet raspberries and leafy notes. A full round palate juicy but dry and powerful.

Rose is the true lovers wine, comfortable in its expression of ripe red rasberries and a sily smooth finish. The simple binding to create this knot is like the Rose, immediately recognised but enticing in its marriage of the style of a white wine with the flavours of a red.

Our roses are an expression of the `summer just gone'. With a softness and balance that sparkles in the sunshine ready for any occasion.

Here I have made the true lovers Knot;
to try in marriage was never my lot.

2006  Carrick Bend Chardonnay

Wine LabelBrilliant green gold. Ripe peachy fruit  with subtle hints of nutty oak and barrel ferment complexity. Rich fruit and fresh round finish.

In the Knots range we have the Carrick Bend, a knot of symmetry, easy to tie and readily untied. The Carrick Bend Chardonnay is like its namesake; an easy drinking style of wine with the balanceand flavours of ripe stone fruits, silky and rich.

The binding of the ripe Chardonnay grape with the finest French oak creates a wine of complexity and savoury food friendly character. Exceptional as a young wine, this will develop with a short mooring in the cellar for that special occasion.

Instead of tying, seaman always say make fast.
